Ingredients: 


1 Batch of Our Vegan Anzac Biscuit Recipe (see recipe post)

1/2 Cup of Raspberry Jam

1 Jumbo Packet of My Dandies Marshmallows 

250g of Dark Chocolate 

1 Tbsp of Vegetable Oil

1 Cup of Desiccated Coconut 

Steps:

  1.  Preheat oven to 180 degrees celsius

  2.  Line a small slice tray with baking paper

  3.  Follow our Anzac biscuit recipe, but press the mixture into the lined slice tray instead of making it into cookies

  4.  Bake for 20-25 minutes or until golden brown

  5.  Remove from oven, spread over the raspberry jam and top with the marshmallows

  6.  Place back into the oven for 10 minutes or until the marshmallows are slightly golden

  7.  Remove from oven and then turn off oven

  8.  Melt the chocolate completely in the microwave, stir in the oil and mix to combine well

  9.  Pour the melted chocolate mixture over the marshmallows and spread evenly to coat completely

  10.  Top with the coconut and place in fridge to set the chocolate completely.

  11.  Slice with a hot knife and enjoy!
